Inaccurate Fuel Calculations

Hello, I have been flying MSFS 2020 and I am looking at what the fuel calculations should be according to the flight plan. However, when I do the actual flight. I am having to dump about 20% of the fuel on arrival due to having way too much fuel on the aircraft. Is there a way to fix this without having to go in and modify the config file at all? Also, is there a chart available with the actual fuel burn rate should be per air frame?
