I had the opposite problem, getting more fuel than I asked for - I elected the standard method, went for 20,000kg but my LDS767 actually received 55,000kg (it is possble that that was the amount already in my tanks when I loaded the aircraft so maybe the client didn't actually put that fuel there). ...

Routes of 12 hours are perfectly feasible, even in real time. Don't forget that once you are in the climb [and not flying with online ATC e.g. Vatsim] your involvement is pretty minor until shortly before the descent - you need to do a couple of step climbs and once in a while check that you haven't...

Not sure which SST you are flying, but in my limited experience (with the SSTSim aircraft, not the PSS one) even at max takeoff weight I think you are still looking at sub-250kt V2+10kt speeds. I haven't flown the SST for quite a while now but I don't recall ever needing more than 250kts in the init...
