I have also noticed this issue, but in my case, sometimes the flight always remains showing the booked status, regardless of any step climbs during the flights. I think you can rule out the aircraft... I have flown many flights with the PDMG 737-800NG and had no problems with the model(s) (with or without winglets) at any destination. May not be much help, but it rules out one potential cause of the issue

Can you also try and add the fleet that the aircraft is allocated in please... Our airline has several different fleets, but it can be tricky deciding which aircraft is in the correct fleet when booking the flight.
